Among the many yummy dishes my daughter-in-law served at my grand boy's recent first birthday extravaganza, was Beet Hummus!
Under her direction, she let me whip up a batch of this healthy and tasty dish!
Starting with fresh beets and garlic. . .
that are roasted, then peeled and chopped. . .
then placed in a food processor with great northern beans and a bit of olive oil, lemon juice and salt. . . .
you end up with this amazing PINK treat. . . which is so great when served with pita chips!
NOW, this is what you get when you take a normally squeaky clean little birthday boy and a serving of Beet Hummus. . . .
well, what more can I say?
OK, I'll say it. . . . TOO CUTE FOR WORDS!!!! :)
Here is the recipe for this dish. You can find it on this link (here) for "WEELICOUS".
Red Beet & White Bean Hummus (Makes 3 Cups)
1 Medium Beet
1 15 Oz Can White Beans, rinsed and drained
1 Large Garlic Clove, unpeeled
Juice of 1/2 Lemon (about 1/2 Tbsp)
1/4 Cup Olive Oil
1 Tsp Salt
1. Preheat over to 400 degrees.
2. Wash beet well and place with garlic clove on a sheet of foil. Bring up sides of foil and fold to make a packet leaving room for heat to circulate inside the packet containing the beet and garlic.
3. Bake for 45 minutes or until beet is tender when poked with a knife.
4. Remove skin off of the garlic and the beet (I use a zip lock bag on my hand and slip the skin off so my hand doesn’t turn red).
5. Place all the ingredients in a food processor and puree until smooth.
6. Serve.

Hmmm, have you changed your blog? I didn't recognize it! Finally a healthy recipe!!! I love hummus, and have never tried this.....not sure what I think of it!! Pink food just does not seem appealing to me....but....well....hmmmmmm. I do like beets....so maybe?!

Hi Dana - That little guy is beyond adorable! And...I think that beet concoction sounds delicious! Dana, although I'm sure you are a great cook I'm sorry to say this to you but.....YUCK!!!! This south GA gal doesn't think she will have any of that. I can't fathom why anyone could/would/should eat BEETS! But sure hope you enjoy your hummus! Never had any of that either. How 'bout some grits or sweet potato pie????

Hi Dana,
Yes Kenai is very close to us about 75 miles up the road. The weather has been spectacular the last few days here and everyone is getting in some fishing. My husband even put his boat in the water and will go out tomorrow. The weather says rain on Sun. we're not having a very nice summer this year.
Hope the hubby brings home some nice Alaskan salmon.

I like hummus but never heard of beet hummus. Sounds good. I love beets...usually have them just plain or pickled.

Like Patti, I've never heard of this. I do love beets, but have never tried any kind of hummus. Not even sure just what it is....:)
One thing I AM sure of...that is the cutest little fella...clean or covered in beets!!

I love beets, and I love hummus! I've thought about making my own hummus, and now that I see how easy it is, I'm going to jot down the recipe. Minus the beets, because I'm the only one who will eat them over here!

It looks so pretty all mixed in a bowl, and No I have never tried this,
but how can one say they don't like something if they haven't tried it.
I am printing this recipe and giving it a try.
Now Stone Rabbit I just don't think carrot hummus would work. I am not
a big fan of carrots unless they are cooked in a roast. Sorry, but you

Hi Dana, this is just darling. I love beets and this sounds delicious. Your grand boy is adorable and he like beets too.
Yes, I did flowers for my friends wedding. Just two bouquets. They look pretty but I am no expert on flower arrangements. HA! they are very simple and kind of country which is just what the bride wanted. We picked the flowers from the gardens at my sister's home and some from mine. No cost just some fun for me to make them. I didn't take a photo yet but I am getting ready to go to our church early to get some.

Dana, Not even in my most organic Hippy days did I ever dream of Beet Humus...hubby and I are super fond of roasted red pepper humus...I like plain with lots of garlic, but beet humus is a new one for me. I would love to try it! Maybe Nancy and I can get Chef Jeff to make us some.

I thought I'd take some time to visit a few sorority sisters today! I love hummus, but I've never even heard of beet hummus. I think it is amazing that sweet baby will eat it! I love beets too...so why not?

Hi Dana, I can picture you in your work room crafting away. I am sure you are making something I would love. You never show us what you make for all these shows? What do you and Bonnie sell? Antiques and crafts? I am curious as heck. HA!
I have had a busy week and here it is Thursday already. The weekend after this we go to Waynesville, NC to my brother's 50th wedding anniversary. Waynesville is less than an hour from here. Their children chose that location because it is central to where a lot of family and friends of theirs live. I know it will be a lovely party and many of our family are coming from all over to attend. A kind of family reunion.
Today I am working in the garden. I can't keep up with these darn weeds. I enjoy it though. Pretty soon fall will be here and the growing season slows down. Bill is looking forward to not mowing.
I hope you have a great show Dana. Tell Bonnie hello and tell her she looks awesome with her weight loss. Give a big hello to the breakfast club too. I sure enjoyed meeting all of your friends.
I am having a cup of coffee and feeling like I can do so many things today that need my attention. It is time for fall cleaning. Our next round of company will be the Jacksonville, Fl. Camera Club. They will come for a long weekend in October. I find myself thinking about the fun we will have. It is beginning to be too quiet around here. HA! Some will stay with us and some in town in a motel. Our house will be the hub of where they will all eat meals and hang out to share their favorite photo shoots. Fun, fun, fun! Blogging material is a good thing.
Bill just got up so I will say goodbye. Did you listen to the singing U tube I sent you yet? Be sure and let your hubby see it. He will get a kick out out it I am sure.
